Tasty Mini Lemon Buns

The kids love making these lemon buns. They are  quick to make and the recipe is pretty fool proof. I let the kids take turns in doing the different steps. One person puts in the sugar, the other cracks an egg and so on.It does take a little bit longer but they enjoy it so much and their favourite part is licking the whisk afterwards.

Ingredients

For the buns:

4oz Marg

4oz Self Raising Flour

4oz Caster Sugar

3 eggs

Juice and Rind of 1 Lemon

For the lemon butter icing:

120g Butter

500g Icing Sugar

Juice of 1 Lemon

1) Melt the butter and add in the caster sugar and mix well.

2) Add the eggs one at a time and whisk them in.

3) Grate 1 lemon and add the rind

4) Sieve in the self raising flour and mix well

I like to make mini buns for the kids as the normal size one that I would make are a little too big for them so I just half fill the cases with the mixture. It means you make twice as many buns, they are just smaller.

Bake in the oven at 180 degrees (fan oven) for 25-30 mins. Leave to dry on wire cooling tray.

To make the butter icing whisk together the ingredients and give the buns a good layer of icing once they have cooled.
